How is Semplicemente Vino Rosso Cascina degli Ulivi 2020 made?

We are talking about a blend of two native red grapes, Dolcetto and Barbera. The vines are rooted in clayey soils rich in limestone and iron, facing southwest. Cultivation of grapes in biodynamics, of course. After the manual harvest, the bunches are pressed, maceration takes place in steel for a week, with at least 15% of whole bunches. Fermentation occurs with indigenous yeasts, in 25-hectolitre wooden barrels, with a total refinement of 11 months. In pure non-interventionist style, malolactic fermentation is free to take place and helps to soften a natural and decisive acidity. There is no filtration and no sulfur is added.

Organoleptic characteristics

The result is an extraordinary wine for its crystalline intransigence. It is not a wine for aging, it will not improve in 15 years, but already with the 2020 vintage, we can drink a sharp and sincere wine that does not deceive you and shows itself for what it is and has. Lots of juice, red pulp, unmistakable aromas, excellent cleanliness, and a drinkability that makes your mouth salivate. The tannins are there, but they are easy to interpret. They give substance but not heaviness to the wine.
