Pizzeria Milana: here’s where to eat an excellent gluten-free pizza in Imola
La Milana is a historic pizzeria in Imola, the first to start making and serving authentic gluten-free pizzas for celiacs.
Many offer them, but few are the pizzerias that practice the separation of the premises to avoid even the slightest contamination of gluten. And this is undoubtedly the number one value of this place.
The second is the commitment to preparing digestible pizzas with hand-made doughs and with great care, using various types of flour such as spelled corn, rice, buckwheat, and many others. The priority is to do well, study, and continually progress.
The leavening lasts 24 hours, and the yeast is the mother yeast of the house. No chemical yeasts are used, and all the flours are organic and carefully selected.
The Menu Of Pizzeria Milana
The menu also offers first courses, main courses, and excellent vegan and vegetarian alternatives, but we will focus on pizzas. Try the tortellini, handcrafted by the Bettini Graziano pasta factory, but with the stuffing of the house. No wonder, nowadays, few make tortellini at home, even the starred ones have outsourced to local pasta factories to streamline costs and times, but the quality is always very high. Especially if you rely on fresh pasta professionals, just like Bettini is.
Closed the parenthesis, and let’s move on to the doughs. Try the two variants, a soft pizza that remembers the Neapolitan pizza and has a thicker rim and is less crunchy, and then the classic flat pizza that the Imolese adore.
The great classics to try: four cheeses, porcini mushrooms, and then the specials like Milana, which is very rich and full of flavor.
If you want a different pizza than usual, try the dough with Teff (Eragrostis tef), a cereal of Ethiopian origin with a particular taste that recalls walnut and is more incisive and sweet. It is very different from the usual, but it deserves a taste, without considering that it is a gluten-free cereal and therefore also suitable for celiacs.
Prices and service
The prices are regular, indeed if we consider that the flours are of excellent quality and that the leavening is long, we certainly cannot complain. The service is courteous and fast, but expect queues for takeaway and long times if you order pizza at the weekend, since the restaurant is always very busy.
The desserts are classic, nothing exceptional, but with nothing to complain about. If not excellent local wine lesson, but targeted with targeted proposals that focus on Sangiovese, Trebbiano, Albana, and a decent selection of German craft beers.
