How to make the roast pigeon with figs recipe
Clean 2 pigeons and pass them on the flame to burn away any plumes, salt and pepper inside, savoring it with a piece of bacon, a bay leaf and 2 dried figs each.
Wrap the breast with thin rashers of bacon, then tie with kitchen thread. Heat a piece of butter and 2 tablespoons of oil, put the pigeons and roast them for 45 minutes, keep them hydrated pouring some Cognac and broth on them.
Salt and pepper them. When the pigeons are almost ready cover them with a small cup of cream. Add the other 4 dried figs and roast for 5 minutes more. Serve the pigeons with mashed potatoes.
