The Volpina Cocktail is the first completely Romagna cocktail, born from Romagna ingredients, made and designed by bartenders from Romagna. It is a very aromatic aperitif cocktail that we thought of starting from the splendid contrast of salt and chocolate, a fabulous combination that does not have many rivals.
The ingredients: Plasir’s chocolate ice cream and Cervia’s Gin Primo with salt. The mind is us, and the hands are those of Andrea Vernocchi, the legendary bartender of Caffè Bologna in Imola.
But why did we choose Plasir’s ice cream? First of all, because it is summer and ice cream is a panacea, and second, thanks to its sumptuousness, it does not need any other ingredients.
Third and last but not least, it goes wonderfully with Gin Primo. Indeed the salty note enhances the sweetness of the ice cream but at the same time amplifies its aromatic borders, adding intense nuances.
We will add 2 apricots to mash in the shaker and 2 mint leaves for a sharp touch.
The preparation is a bit laborious, but in the end, the result will be an irresistible cocktail, which starts sweet but then opens to a thousand contrasting aromas and flavors.
Do not be fooled by the ice cream. The Volpina cocktail has alcoholic thickness. It is not plump nor a dessert but an excellent aperitif.
Ingredients and doses to make the Volpina cocktail
- 40 grams of Plasir chocolate ice cream
- 4.5 cl of Gin Primo with Cervia salt
- 2 apricots
- a pinch of salt
- 2-3 mint leaves
How to prepare the Volpina cocktail
Wash the apricots, put them in the shaker with the ice cream, and mash them with a pestle.
Slap the mint, throw it in, pour the Gin Primo, correct with a pinch of salt, and stir. Never crush the mint.
Add 3-4 ice cubes and shake for 2 minutes when the ice cream has adequately melted.
Pour into an iced cup, filter with a fine sieve, crush well with a spoon, then decorate with an apricot wedge and 2 mint leaves.
