The Midori Spritz is a very simple cocktail—a light, fragrant, and unpretentious sparkling aperitif.
It’s the same as the same old Spritz made with wine, soda, and bitters, only instead of the bitters, you’ll have to use this lovely Japanese melon liqueur. It doesn’t seem like it, but it’s a significant change because Midori is a very sweet liqueur with an intense flavor, so it needs to be dosed and mixed with an acidic ingredient to rebalance the drink.
Never use Prosecco to make a spritz; it is too fruity and not very incisive. A good savory wine and soda are the basic ingredients for making a quality Spritz.
If you use prosecco and Midori, a terrible sweet concoction comes out. Unless you use a rocky prosecco like Case Coste Piane, at which point it would be a shame to spoil a good wine for a cocktail of this type, it’s better to drink it alone.
