Port wine poached Pears are a delicacy, a sumptuous dessert by themselves, but to make them even more delicious, we set the pears in an ice cream cup, sprinkled them with crushed almonds and then everything was covered with a nova of melted chocolate.

Too much?

Of course, if you are on diet this is not the right recipe, because the calories are so many that you’ll need a marathon to burn all of them, but sometimes bending the pears it’s acceptable, especially if you want to serve an irresistible and very easy to do dessert.

And believe me, this dish is perfect also for a very elegant dinner, no matter even if you are sharing the table with the Queen of England.

So keep it in mind for your next dessert: the recipe is simple, perhaps a bit ‘long and laborious, but the final result of all the efforts will pay off.

Ingredients for the Port wine poached pears with melted chocolate over vanilla ice cream

For 8 cups

  • 4 pears
  • 250 grams of sugar
  • 1 tablespoon of cinnamon
  • 1 tablespoon of cloves
  • 1 anise, optional
  • 1 a piece of organic orange peel
  • 3 glasses of Port
  • 1/2 liter of water
  • 4 ounces of vanilla ice cream
  • 200 grams of almonds
  • 300 grams of dark chocolate
  • 70 ml of fresh cream
  • a pinch of salt

How to prepare the Port wine poached pears with melted chocolate over vanilla ice cream

Wash the pears and place them in a pan so that they are “standing” tall and firm, pour water, sugar, spices, and Port and cook gently for 15 minutes over medium heat if you can cover the pan with foil.

Remove the pears from the pan and let them cool, then cut into 4 wedges and place in a dish.

Strain the sauce and boil until it becomes syrup.

Cover the pears with the sauce.

With a sharp knife coarsely chop the almonds.

Put the ice cream in the cups/glasses, lay a slice of pear and a little ‘of chopped almonds.

So far, the recipe can also be prepared in advance to save time, now it’s time to make a perfect dark chocolate ganache.

Melt the chocolate in a double boiler flame sweetly, the water doesn’t have to boil, adding the cream and a pinch of salt.

Adjust the consistency of the chocolate ganache adding more fresh cream, if you like it more or less dense.

Stir the ganache, pull the glasses with the ice cream out of the refrigerator and complete with a flow of melted chocolate, just before serving.

And here it is a fancy, super delicious dessert to finish off in style an important dinner or to make your friends dream.

We choose an elegant sweet wine like the Sagrantino passito of the Perticaia winery.
