Another Friday has arrived and another random fish dish is coming. Today I was too lazy to even think about making something, so we will take it easy and make Sardinian Gnocchetti with salmon and ginger.

It’s a super easy and fast recipe that doesn’t require any special master lever skill. Until you have salmon in your pan there is life…

The only particularity of this fish dish is ginger, which adds a delicate and fresh touch, perfect to degrease the oily soul of salmon and make it more digestible.

To make the dish we used farro gnocchetti, so if you manage to find them you can make a delicious pasta dish, but of course, you can use any kind of pasta.

I have not timed the recipe, but we are at historic lows, perhaps under 20 minutes. If you want to be a great host (and cook), keep that recipe in mind if some guests arrive at home unexpectedly.

Ingredients for making Sardinian gnocchetti with salmon and ginger

4 servings

  • 300 grams of salmon
  • 300 grams of Sardinian gnocchetti made with farro
  • 60 grams of parsley
  • 30 grams of extra virgin olive oil
  • salt and pepper
  • 5 grams of ginger
  • 1 clove of garlic

How to make the perfect Sardinian gnocchetti with salmon and ginger

Fill a pot with water and bring to boil.

Crush garlic and ginger and let them sauté in a pan with 5 spoons of oil, on low heat. After 3 minutes let the salmon join the party, cook for 5 minutes, then pour in a drop of vodka and mash with a wooden spoon.

Do not add any milk or cream, salmon has already a lot of fat.

When water boils, add salt and toss gnocchetti and cook until al dente. Drain and toss the pan with the salmon and season properly.

Sprinkle with parsley and pepper and serve.

Now two words about Sardinian gnocchi: they are far from the classic potato gnocchi, they are like a kind of orecchiette, and in Sardinia, they are called malloreddus.

What wine matches well with gnocchi with salmon and ginger?

We choose a floral wine, fresh and aromatic as the Gewurztraminer from Bellaveder winery.

If you prefer a cocktail, ginger call Ginger, prepare a Moscow Mule and everything is gonna be ok.
