With spring and Easter, strawberries also return: authentic delicacies for those who want to make cocktails and not just delicious cheesecakes.
They have an incredible flavor, and the scent is graceful, unique, and inviting like few others, but so much abundance needs care and attention. If you want to make a strawberry caipirinha, it’s okay to pound them roughly, but if you’re going to make the nectar, never use the blender: you will kill them.
Mash them with a pestle in a colander or with a spoon. Work without haste, and you will be rewarded with delicious nectar.
And so, the Brunilde cocktail was born in honor of the mythical Valkyrie, invincible warrior of the Nibelungen Saga. You can serve it as an aperitif cocktail for this Easter 2022. We hope it is a good omen.
The cocktail’s ingredients are many: strawberry nectar, fennel, mescal, lime, absinthe, and a final top of egg white for a soft and velvety foam. If you are vegan, uncork a can of chickpeas and use the preserved water: it is the same thing for the cocktail. A small amount is needed in both cases.
The Brunilde cocktail is an excellent aperitif, not too alcoholic. It has a pleasing aroma given by the encounter between fennel and absinthe, with mescal’s smoky and tropical flavor in the background.
Ingredients and doses to make the Brunilde cocktail
- 5 cl of mescal
- 7 strawberries
- 2 cl of lime
- 1.5 cl of sugar syrup
- 1 teaspoon of absinthe
- 2 wedges of fresh fennel
- 1/2 egg white
How to make the Brunilde cocktail
Wash strawberries and fennel.
Put the fennel in the shaker and pound with a pestle to extract the juice, then filter and empty.
Now put the strawberries in a colander and squeeze them to get the nectar.
Pour the fennel juice, absinthe, syrup, lime juice, and mescal into the shaker, add 4 ice cubes and shake for 12 seconds.
Pour into a glass, filter, and serve.
If the strawberries are excellent and ripe, halve the syrup dose.
