Poland Welcomes Its First Two-Michelin-Star Establishment
The esteemed Bottiglieria 1881 in Kraków has received the honor of becoming Poland’s inaugural Two-Michelin-Star restaurant, moving up from its previous one-star status according to this year’s Guide.
The pool of Polish restaurants recognized by the Michelin Guide has nearly doubled this year, with an impressive total of 22 new entrants. This brings the tally to 49 recommended establishments spread throughout the nation, with 18 in Kraków, 11 in Poznań, one in Kościelisko, and 19 in the capital city of Warsaw.
Michelin inspectors ventured into Poznań in Western Poland as part of their assessment, spotlighting 11 restaurants within the city.
In a historic turn of events, Poland now proudly features a restaurant with two Michelin stars. The 2023 Guide also newly conferred one Michelin star to two restaurants and identified six new Bib Gourmand eateries.
Bottiglieria 1881, the recipient of two stars, offers two curated tasting menus: the ‘Introduction’ and the ‘Full Experience’, both of which comprise “inventive, well-balanced dishes”, as described by the Guide.
Gwendal Poullennec, the International Director of the MICHELIN Guides, commented, “We are delighted to announce Poland’s first ever Two MICHELIN Star restaurant, as we keep tracking the exhilarating culinary progression in Kraków and Warsaw. We are equally thrilled to extend our coverage of Poland to include Poznań, one of the nation’s oldest cities with a rich cultural heritage. The inspectors were taken by its dynamic and burgeoning restaurant scene and have discovered numerous appealing restaurants to recommend to our readers.”
In parallel, the Michelin Guide Nordic Countries 2023 was launched this month, featuring 42 new additions and bringing the total to 271 listed establishments.
Aira in Stockholm, Sweden, and Koan in Copenhagen, Denmark, were both bestowed with two Michelin stars this year. A total of fourteen new one-star restaurants were unveiled across Denmark, Finland, Iceland, Norway, and Sweden.
