Ellers Farm Unveils Whisky Evolution: A Maturation Journey in Limited Edition
Ellers Farm Distillery, in a unique alliance with Theakston Brewery, invites whisky enthusiasts to witness the maturation of their signature spirit through the exclusive Evolution Collection. A limited release of five bottlings, this series will track the spirit’s metamorphosis from its raw beginnings to a mature single malt.
Each of the 500 sets available (priced at £500) will grant connoisseurs a sequential tasting experience—starting with the “Bairn” new-make spirit, followed by expressions at six, twelve, eighteen, and twenty-four months. These milestones will culminate in the much-anticipated First Release Single Malt Whisky in November 2025—limited to 1,000 bottles.
Subscribers to the collection will benefit from an annual distillery tour and an individually numbered bottle of the First Release. The journey begins with the new-make and six-month-old spirits dispatched immediately upon purchase, with subsequent expressions delivered at the defined maturation intervals.
Ellers Farm, employing Theakston Brewery’s near two-century brewing expertise, crafts its wash from Yorkshire barley, reminiscent of a robust porter. This collaboration underscores their commitment to showcase the evolution of whisky, aged for a minimum of three years in first-fill bourbon barrels, from an embryonic spirit to a fully-fledged whisky.
Chris Fraser, founder of Ellers Farm, and Jamie Baggott, the master distiller with over 15 years of expertise, including tenure at Ballykeefe Distillery in Ireland, are at the helm. Baggott brings a wealth of knowledge to the distillation process, boasting custom-built stills from Italy. The collaboration is a testament to the fusion of time-honored brewing methods with modern distillation artistry.
