The Making of Binchotan
Choice of Wood:
Binchotan derives its uniqueness from oak or other hardwood varieties, notably the ubamegashi wood (Quercus phillyraeoides).
- Drying: The wood undergoes drying to shed moisture.
- Initial Charring: Slowly heated in kilns up to 200-300°C, the wood transforms into raw charcoal.
- Cooling and Refinement: The charcoal is cooled and rid of contaminants.
- Secondary Carbonization: In an oxygen-deprived furnace, the charcoal is reheated between 1000 and 1300°C, refining its pores to a dense structure.
- Steam Cooling: Rapid cooling with steam imparts Binchotan’s iconic white sheen.
Applications of Binchotan
- Binchotan’s prowess in grilling, especially in Japanese dishes, is unmatched. Its high-heat, low-smoke nature ensures even cooking.
- Light it gently, preferably using a burner or newspaper.
Beyond the Grill – Purification:
- While luxurious in cost, akin to caviar, Binchotan’s purifying properties are stellar. Traditionally, charcoal can absorb toxins if ingested, allowing safe expulsion from the body.
- Vodka benefits from filtration through charcoal to enhance its neutrality. Although, luxury brands might not necessarily opt for Binchotan.
- For a natural filtration alternative to Brita’s carbon filters, introduce a few Binchotan pieces into your water pitcher, ensuring removal of impurities like chlorine and unwanted minerals.
Owing to its meticulous production and unparalleled quality, Binchotan doesn’t come cheap. Costs fluctuate based on its quality and provenance, with wholesale prices starting around 10-13 euros per kilogram.
