A typical blend incorporates 60% one-year-old lambic with 40% that’s two or three years old. This concoction is then bottled for its second fermentation, spanning a few months to over a year. Here, the younger Lambic’s residual sugars get fermented by yeasts from the older Lambic, yielding the signature carbonation.
True to tradition, gueuzes are crafted solely in the Pajottenland region, located southwest of Brussels, and within Brussels itself. This territory boasts a unique wild yeast biodiversity, lending Gueuze its signature taste.
