Ingredients for making pasta with spicy eggplant and nduja sauce

- 550 grams of pasta
- 3 cloves of garlic
- 1 or 2 eggplants
- 3 slices of Spilinga Calabrese nduja
- 400 ml of tomato sauce
- 1 basil leaf
- salt and pepper
- pinch of cumin
- extra virgin olive oil
How to make pasta with spicy aubergine sauce and Spilinga nduja
Wash the eggplant, then cut it into slices and sprinkle with coarse salt. Let it “drain” for 1 hour, then rinse and cut into small cubes.
Sauté the cubes in 4 spoons of EVOO until they are well browned.
Remove the eggplant from the pan, mash the garlic, chop it and cook in the pan with 4 tablespoons of oil.
After 3 minutes add the tomato sauce and eggplants, season with salt, pepper, basil, cumin and cook for 10 minutes.
After 10 minutes, add the nduja, just a little, and cook 10 minutes more.
Cook pasta al dente, drain and keep some cooking water aside.
Throw the pasta into the pan, add splash cooking water and finish cooking in the sauce.
Sprinkle with pecorino romano cheese and serve a delicious, super easy to make pasta dish!
