Christian Drouin Sélection takes a very different route from the house’s older, more oak-driven Calvados. Created in the 1990s, it was designed around immediacy and fruit, using cider apples with around 30% poiré pears, followed by single distillation in a column still and only two years in old casks.
That combination changes the character completely. The pear lifts the profile, the short ageing keeps oak in the background, and the spirit stays focused on fresh apple, ripe pear and light floral notes rather than walnut, leather or deep oxidative complexity. It is deliberately youthful, but not simplistic.

Appearance
Pale gold, bright and clean, with none of the darker amber tones associated with prolonged oak ageing.
Nose
The nose is direct and fresh, opening on crisp apple, ripe pear and white flowers, followed by a light touch of almond and vanilla. The old casks contribute very little toast or tannin, which allows the fruit to remain unusually clear.
With a few minutes in the glass, there is also a faint honeyed note and a subtle floral lift that makes the profile feel lighter than most young apple-only Calvados.
Palate
The palate is soft and agile, with fresh apple, pear skin and light vanilla at the centre. The pear component gives the spirit a slightly sharper and more fragrant profile, while the apple adds roundness and sweetness of fruit.
There is enough alcohol warmth to remind you that this is still a 40% spirit, but the texture remains light and easy. Oak stays firmly in the background, which is exactly the point here.
Finish
Medium in length, clean and lightly spicy, with apple peel, clove, pear and a faint smoky note lingering after the fruit fades.
The finish is not built for depth or complexity, but it remains precise and avoids the rawness that can affect very young fruit spirits.

Absolutely. Sélection is designed to be enjoyed young and does not need further bottle ageing.
The appeal lies in its freshness, so there is little reason to hold it for years waiting for additional complexity. Once opened, it should remain stable for a long period if stored upright, cool and away from direct light.
Serving
Serve neat around 16–18°C if you want the apple and pear aromas to remain clear, or slightly cooler as an aperitif.
It also performs very well in cocktails because its fruit remains visible through dilution. Highballs, apple-based sours and lighter Calvados cocktails suit it better than heavy stirred drinks where older wood character would normally be desirable.
Food Pairings

Keep the pairings on the fresh, savoury side. Tarte Tatin with crème fraîche, roast pork with caramelised apples, and buckwheat galettes with ham and mushrooms all match the spirit’s apple-and-pear profile naturally.
For cheese, choose Pont-l’Évêque, Livarot and Camembert de Normandie. Their salt, creaminess and washed-rind character give the Calvados enough contrast without overwhelming its lighter structure.

At €35.50 direct from the producer, Christian Drouin Sélection sits in a very reasonable position for an AOC Calvados from a serious house. It is not trying to compete with mature Pays d’Auge releases, and judging it by age would miss the point.
The value comes from clarity of fruit, technical precision and versatility. It works equally well as an introduction to Calvados, as an aperitif spirit or as a cocktail base without feeling anonymous.
What Defines Sélection
The decisive feature is the 30% poiré pear component. That proportion is high enough to change the texture and aromatic profile noticeably, making the spirit fresher, more floral and less weighty than many apple-only Calvados.
The second key element is the restrained use of wood. Two years in old barrels soften the spirit without covering the fruit in vanilla or toast, which keeps the style very clean and immediate.
Sélection therefore works because it does not pretend to be older or more complex than it is. Its identity is built on fresh fruit, not on cask influence.
