Can a Clear Pear Eau-de-Vie Carry a Sense of Place? Marolo Prûs Makes the Case
Marolo’s Prûs Acquavite di Pere is a useful reminder of how different a true fruit eau-de-vie can be from a liqueur. There is no sweetness to lean on, no barrel ageing to add vanilla or spice, and no attempt to make the spirit taste richer than the fruit itself. At 40% ABV, the entire profile rests on ripe pear, clean distillation and a deliberately neutral maturation in stainless steel.
Produced by Distilleria Santa Teresa – Fratelli Marolo in Alba, Prûs belongs to the distillery’s small range of fruit spirits alongside apple and apricot eaux-de-vie. The style is intentionally direct: crystal clear, aromatic but not perfumed, round in texture yet fully dry on the finish.

Appearance
Completely clear and bright, with no colour from wood or caramel. The visual simplicity fits the style perfectly: this is a spirit built to preserve the fruit rather than transform it through ageing.
Nose
The nose is clean and immediately recognisable, with ripe pear, pear skin and a faint floral freshness. The fruit feels natural rather than candied, and there is no obvious vanilla, toast or spice because stainless steel keeps the aromatic profile untouched by oak.
With a little air, the pear becomes rounder and slightly more fleshy, moving from fresh-cut fruit toward a softer, fully ripe expression. The alcohol remains present but does not obscure the main aromatic line.
Palate
The palate is dry, smooth and more rounded than the nose initially suggests. Ripe pear and pear flesh dominate, with a faintly oily texture that gives the spirit enough weight to avoid feeling thin.
There is no residual sweetness, but the natural fruit character creates an impression of softness before the alcohol tightens the middle of the palate. The balance works because the spirit stays focused: the fruit is clear, the texture is clean and nothing interferes with the pear.
At 40%, Prûs has enough warmth to feel like a proper eau-de-vie without becoming aggressive. The strength supports the aromatics rather than overwhelming them.
Finish
Medium in length, dry and clean, with pear skin, ripe fruit and a light warming note. The finish is more austere than the nose, which helps prevent the spirit from becoming cloying.
Serving
Serve at 16–18°C, slightly cool but not chilled.
Too low a temperature suppresses the pear, while room temperature can make the alcohol more obvious than necessary. A small tulip-shaped eau-de-vie glass works better than a large balloon because it concentrates the fruit without amplifying the alcohol.
Prûs also makes sense as a clean after-dinner spirit, especially when you want something drier and more precise than a liqueur or aged grappa.
Food Pairings

Keep the pairings delicate enough to preserve the pear. Try pear and almond tart with little added sugar, roast pork loin with pear and mustard, or foie gras with lightly poached pear.
For cheese, choose Robiola di Roccaverano, Taleggio and Comté 24 months. Their creaminess and salt provide contrast without overwhelming the fruit.
Price and Value
€40–€45 for 50 cl. That is a fair position for a small-production fruit eau-de-vie from an established distillery. The value lies less in complexity than in precision: the pear is unmistakable, the spirit is dry and the lack of oak allows the raw material to remain fully exposed.
What Defines Prûs
The most important feature is restraint. Stainless-steel maturation keeps the spirit transparent, so there is nowhere for poor fruit or rough distillation to hide.
The result is not a flamboyant eau-de-vie, but a very direct one. Ripe pear, clean alcohol and a soft, dry texture remain in focus from nose to finish, making Prûs especially convincing for drinkers who prefer fruit spirits without sugar, wood or aromatic decoration.
