As Christmas desserts, we have them in abundance, but one of the most particular that you can make very easily is the vegan gingerbread bundt cake. It is a real delight, a cake made with the dough of gingerbread men, but in a softer version: the bundt is just the name of the Bundt mold, which is the one from which the classic molds that we use in Italy for prepare donuts. Its peculiarity is that it is made with molasses and usually honey, but since we want a vegan dessert you can also use maple syrup, which gives the dessert a wonderful and very soft texture.

The recipe for this vegan gingerbread bundt cake is very easy, and we made it vegan since there will already be plenty to eat for the holidays. If you are still undecided about the Christmas cake or what to give a healthy snack to your children, try this cake and you will not regret it.

Ingredients and doses to make the vegan Christmas gingerbread bundt cake

  • 320 grams of flour
  • 120 grams of sugar
  • 12 grams of yeast
  • 10 grams of baking soda
  • 7 grams of ginger powder
  • 5 grams of nutmeg
  • a pinch of salt
  • 460 ml of almond milk
  • 210 grams of molasses or maple syrup
  • 90 grams of vegan soy yogurt
  • 200 grams of olive oil
  • 10 grams of vanilla
  • 40 grams of cocoa powder

How to make vegan Christmas gingerbread bundt cake

Turn on the oven immediately and set the temperature to 180, just to make the cake dough it will take very little and the oven must be very hot.

Sift the flour into a large bowl, then add all the dry ingredients and mix carefully.

In another bowl, mix all the liquid ingredients, then when they are well blended, start pouring the liquids into the large bowl with the flour and mix vigorously with a spoon.

Mix well for at least 5 minutes to give the dough consistency and air. If you want to do it first you can also use the electric whisk or the planetary mixer.

Now grease and flour a bundt cake mold and pour the mixture. Balance well and tap the mold a couple of times: as with the madeleine dough, we don’t want large bubbles inside.

Bake the bundt cake and bake for 45-50 minutes. To check if the bundt is cooked, as usual, pierce it with a toothpick and if it comes out clean and dry then turn off and take the cake out of the oven. Otherwise, cook for 3-4 minutes and then turn off.

Remove the cake from the oven and let it cool for 20 minutes, then place a pan or plate on top of the mold and flip to remove the cake from the mold.

If you want you can decorate with berries or powdered sugar or simple extra dark chocolate melted in a bain-marie.

Which wine goes well with the vegan Christmas gingerbread bundt cake?

This cake is sweet, spicy, and very consistent, so avoid slender or semi-sparkling wines, but focus directly on liqueur and distilled wines to tame such a challenging sweet dessert: sweet vermouth, port wine, Marsala, Madeira wine, Sherry, Brandy, Cognac, and Calvados are great.

If you want to combine a cocktail, the White Russian is perfect.
