Ingredients and doses for making the black rice salad with pancetta and zucchini

- 500 grams of venus rice
- 3 shallots
- 3 zucchini
- 150 grams of bacon
- salt and pepper
- parsley, optional
- 3 cm of ginger
- 2 cloves of garlic
- a sprinkling of nutmeg
How to make black rice salad with pancetta and zucchini
First of all, buy a good black rice then cook it according to the instructions in vegetable broth, drain, season with extra virgin olive oil, salt, and pepper and let it cool.
Cut the bacon into cubes, put it in the pan and saute for 10 minutes. Put the bacon aside, but don’t throw away the fat.
Chop ginger, garlic and shallots and brown in the pan with the pancetta fat, adding a little EVOO if necessary. 10 minutes on a low flame.
Wash the zucchini and make a brunoise, then toss in the pan with the pancetta, season with salt, pepper and a sprinkling of nutmeg. Cook for 15 minutes, then turn off and add the pancetta.
Season the black rice with the sauce of pancetta and zucchini, mix well, serve and eat a delicious and super easy dish.
