What’s better than a pairing of peaches and muscatel? But obviously, the peach, vanilla, and Moscato muffins! Some delicious desserts you can prepare in less than half an hour, but which you will then brush away in 30 seconds flat.

The recipe for making these peach and Moscato muffins is always the classic one, fast, clean, and efficient with ricotta instead of butter. Less saturated fat in the blood never hurts! Especially if you want to add a little whipped cream or a dose of pistachio ice cream to make your muffins even more irresistible!

Ingredients and doses for making muffins with peaches and Moscato

For making 15-18 medium-small muffins

  • 300 grams of cottage cheese
  • 80 grams of sugar
  • 4 eggs
  • 4 drops of vanilla extract
  • 350 grams of flour
  • 10 grams of baking powder
  • 4 grams of salt
  • 300 grams of peaches
  • 50 grams of white chocolate
  • 1 glass of sweet Moscato

How to make muffins with peaches and Moscato

Unless they are chocolate or dark chocolate muffins, ricotta (or cream cheese) is a must if you want to make soft and velvety muffins. You can also use butter, but it is much more harmful, heavier, and rich in saturated fat. You see.

Do not remove the peel from the peaches. Otherwise, you lose all the flavor. Buy organic and you’ll be fine.

Cut them into pieces and season with the Muscat, then cover and let it rest in the fridge for 3 hours.

Put the ricotta in a bowl and work it with an electric whisk while pouring the sugar.

Add the eggs one at a time, waiting for them to blend well.

Melt the chocolate in a saucepan over low heat and let it cool. It should not be boiling but lukewarm.

Now pour in the vanilla, salt, baking powder, baking soda, and flour, sifting it slowly.

Squeeze the peaches well to remove the Moscato and throw them in too.

Stir and finally add the melted chocolate, stir again, pour into paper cups, and put them in the muffin mold.

Take care not to fill the mold; 2/3 is fine. Our creatures must rise and grow!

Place in the oven and cook for 20-25 minutes, then remove from the oven and let cool.

Enough, finished. You will prepare the best muffins of your life in a few minutes!

Which wine to pair with peach and Moscato muffins?

Serve the exact wine you used to make the muffins. Opt for great fortified wines and spirits such as sweet vermouth, Port wine, Marsala, Madeira wine, Sherry, Brandy, Cognac, and Calvados if you want to combine something stronger.

If you want to accompany a cocktail with these delicious treats, the White Russian is perfect.
