It’s dinner time, and you’ve invited some friends over, but you’re not in the mood to cook, and you have no idea what to serve them to satisfy their appetites. What should you do in this precarious situation?

But it goes without saying that you should whip up an aperitif on the spot! Mojito, yes! Spritz, yes! Margarita, yes! Tapas, appetizers, and sandwiches are all on the menu, but the most important thing is that we are going to give you the recipe for a dip that is not only the most exceptional thing in Greek cuisine, but in all of culinary history.

Today, we will be preparing the exquisite Taramasalata, a dish also known as Tarama. This velvety spread is made from salted fish eggs (the original tarama), stale bread, olive oil, and lemon.

Fish eggs, including Tarama, have been enjoyed since ancient times, alongside other delicacies like caviar. Historically, the consumption of fish eggs can be traced back to the region surrounding the Caspian Sea, which served as a natural border between ancient Persia and Russia.

The Caspian Sea is home to an abundance of sturgeon, the fish species that produces the finest caviar. Over time, the popularity of fish eggs spread across various cultures and cuisines, and Taramasalata became a staple in Mediterranean and Middle Eastern gastronomy.

Ingredients

  • 200 g of fish eggs
  • 400 g stale white bread, soaked in water and drained
  • 25 grams of olive oil
  • Juice of 2 lemons
  • 200 grams of chopped red onion, 1 big onion or 2 small

Preparation

  1. Place the bread, onion, and fish eggs in the bowl of a mixer and start the machine.
  2. Mix until you achieve a homogenous mixture.
  3. Mix in a half of the lemon juice and add the zest.
  4. Pour the olive oil in a slow stream while continuing to stir the mixture until it reaches a smooth and creamy consistency.
  5. Mix in the remaining lemon juice, then stir to combine. Include pita bread with the dish.

What to Pair with Taramosalata?

The incredibly flavorful and adaptable taramosalata is the ideal side dish for a variety of dishes. Serve this delicious Greek treat with warm, freshly baked pita bread, salty breadsticks, or for a healthier option, crisp vegetable sticks like carrot, cucumber, and bell pepper sticks.

Taramosalata goes well with other Mediterranean appetizers like dolmades, hummus, tzatziki, and olives when served as part of a meze platter.

Consider spreading a thick layer of Taramasalata on a piece of crusty bread and topping it with thinly sliced grilled shrimp or smoked salmon for a lysergic experience.
