Pork recipes: stewed pork with dates and coconut milk. Cooking school.  This week while visiting my local grocery store I came across some spectacular dates that inspired me. They are an excellent fruit to eat as a snack or dessert. I wanted a second ingredient to add to the flavor of the orient to my stew.

After several times around the shelves I came across coconut milk, which gave me the inspiration to mix the flavors of the orient with the flavors of the islands and Quebec pork: and here we have the the stewed pork with dates and coconut milk, bon appétit.

  • 1.5kg pork (stewed, cut into cubes)
  • 420g (3 cups) pitted dates
  • 2 tablespoons cumin
  • 2 onions
  • 2 stalks of celery
  • 3 bay leaves
  • 1.5 liters chicken stock
  • 1 eggplant (480 g)
  • 340 ml of coconut milk
  • 1/8 cup olive oil
  • branch cilantro
  • salt and pepper
