No bake cheesecake with cranberry sauce: recipe, ingredients and coocking tips Cheesecake is a myth, the dessert that has revolutionized the way of making cakes and desserts, making them available to everyone. To make a good cheesecake you do not need any special skills, just assemble the ingredients and follow the recipe. There is no puff or shortcrust pastry to prepare with all the pitfalls and various steep steps to make.

But for an even easier recipe here is the no-bake cheesecake with blueberries. We are really at the absolute minimum of effort to make a cake. No oven, no blender: the hardest part is to remove the ingredients from the packets and resist the temptation to eat all the blueberries before processing them.

The result? It’s a galactic cheesecake that you will prepare with very few and simple passages, but it’s much lighter and healthier than the usual cheesecakes, with few calories, thanks to the ricotta cheese and the very low amount of sugar and butter.

Ingredients for the no-bake cheesecake with cranberry sauce

  • 200 grams of cheese
  • 180 grams of yogurt
  • 3 tablespoons of milk
  • 2 tablespoons of sugar
  • half of a lemon
  • 5 grams of gelatin
  • 100 grams of blueberries or fruit of your choice
  • 200 grams of biscuits crumble to the bottom of the cheesecake
  • 70 grams of butter (optional)

How to prepare the no-bake cheesecake with cranberry sauce

Take the gelatin and dip it in water to soften it.

In a bowl mix the ricotta cheese with sugar with a fork.

Squeeze half a lemon, strain the juice and add the cheese and continue stirring.

Pour the yogurt into the bowl and guess what? Yesss, whisk again!

Heat the milk slightly until it becomes warm and melt the gelatin, stirring gently.

When melted, add them to the mixture.

Crumble the cookies in a food processor and prepare the bottom of cheesecake amalgamating them with the melted butter. The butter is optional if you want a lighter cheesecake does not use it.

Take a round mold and compact the cookies pressing with your fingers.

Pour the mixture and compact with a spatula.

Put it in the freezer and let stand for at least 3 hours.

Cut and put on plates and coat with a little bit of cranberry sauce, which you’ll prepare simply processing them.
