This vegan apple pie is a very easy recipe to make, there are no particular difficulties. In fact, within 20 minutes you will be able to do all the operations for the dough and then off to the oven: in all for a maximum of 60 minutes. Such a fast and furious, yet full of flavor dessert is hard to find.
But above all, this vegan cake has very little fat and even the sugar doses are not worrying, so you can serve it to your children without problems. Indeed, compared to the usual industrial snacks full of palm oil and poor quality sugar, this cake is a masterpiece of wholesomeness.
Returning to the sugar topic, to make the cake as digestible and healthy as possible we used maple syrup, perfect not only as a sweetener but also as a substitute for eggs to bind the ingredients and make the cake rise so that it will become soft and very soft.
The recipe for making apple pie is very easy and you won’t need strange ingredients, all of which are usually found in the house. The trick, as always, to make the cake rise and make it digestible is to use the combination of cream of tartar and bicarbonate, which unlike industrial yeasts does not have any contraindications.
How to make a delicious vegan apple pie

- 350 grams of wholemeal flour
- 50 grams of potato starch
- 200 grams of soy yogurt
- 5 grams of vanilla powder
- 6 grams of ground cinnamon
- 120 grams of maple syrup
- 6 apples
- 50 ml of extra virgin olive oil
- a drop of almond milk to perfume
- 2 organic lemons, untreated
- 6 grams of cream of tartar
- 6 grams of baking soda
How to make the perfect vegan apple pie
Turn on the oven and set a temperature of 170 degrees, static oven.
Squeeze the lemon and put the juice in a bowl, add the raisins, and stir. Cut the apples into chunks or slices. Some cut them a little larger, they will be placed on top of the cake as a decoration, before cooking. Put in the bowl and season well with the lemon so as not to oxidize the apples. Grate the lemon peel and add it to the apples.
Never peel apples, buy quality, organic apples that are not full of pesticides. If you peel the apples you remove all the flavor. The real secret to making apple pie right is apples. Spend a few euros more, but buy real fruit, you don’t need much else to make a great cake!
Put the flour in a bowl, add the cinnamon, vanilla, and stir. Put in the mixer and start kneading by adding the yogurt first, then the extra virgin olive oil, and finally the apples and all the contents of the bowl. Set aside a few slices of apple to put on top.
Mix baking soda and cream of tartar and dissolve them in a drop of lemon. Stir well, then pour into the dough and knead for a few more minutes. The mixture should be soft and light, so add a drop of almond milk to flavor.
Meanwhile, grease a round cake mold of about 20 centimeters in diameter with oil, then flour it. Pour the apple pie mixture inside and place a few slices of apples on top, making it sink a little.
Cooking the vegan apple pie
Place in the oven and bake at 170 degrees for 40-50 minutes. To understand if the cake is cooked, do the toothpick test: plant a toothpick in it and if it comes out dry then turn off: the cake is cooked. Otherwise, continue for a few more minutes.
When the cake is ready, turn it off and let it cool slowly in the oven, with the door ajar.
Remove the cake from the oven and sprinkle it with icing sugar if you want.
If you want to add an even more aromatic touch, add 50 grams of ground almonds or almond flour.
Which wine to pair with vegan apple pie?
To cut the sweetness of this great classic of home pastry, we choose an intense wine, very sweet, but with a good freshness to cleanse the palate: the Albana Scacco Matto 2008 from Zerbina is ideal. If you want to combine something more structured, we can choose between sweet vermouth, Porto, Madeira and Marsala, Sherry, Brandy, Cognac, and Calvados.
