Today’s cocktail, codenamed Mono Loco, is a very aromatic, fresh, slender drink, but you will fall in love. Don’t worry, the alcohol content is quite light, so it lends itself well to serve as a fruity aperitif.
The ingredients of this light aperitif: mezcal, pineapple juice, a little bit of elderberry syrup and a pinch of pepper. The balance is nice, it is subtle, played on sumptuous, fruity and smoked suggestions of the mescal that mix perfectly with the floral charm of elderberry.
Pineapple juice is a perfect, sumptuous but generous binder in welcoming two intense ingredients. Despite being very pulpy, it does not dominate them. A pinch of pepper gives rhythm and vitality.
A dispassionate advice: be careful using the elderberry syrup, use it sparingly, otherwise, it flattens everything with its aromatic arrogance.
Ingredients and doses to make the Mono Loco cocktail
- 4 cl of mezcal
- 4 cl of pineapple juice
- a pinch of pepper and a pinch of salt
- 2 teaspoons of elderberry syrup
- 2 dash of lime
- 1/4 egg white
How to make the Mono Loco cocktail
It doesn’t take much to make a good cocktail: you have to settle for only the best. For pineapple juice, the extractor is essential, do not use industrial juices full of sugar. If you do not have the extractor, use a masher or the pestle and crush the pineapple in a colander.
For the rest the procedure is classic: put pineapple juice, salt and pepper, elderberry syrup, mezcal, egg white and 2 drops of lime in a shaker without ice and shaker for 1 minute. Add some ice, shake quickly, then pour, filtering, into a glass.
That’s all: in a few minutes you will make a fabulous cocktail, simple and direct, but its meaty and slightly smoked flavor will bewitch you!
