Ingredients to make a perfect lemon gelato
- 200 ml (7 fl oz/ 7/8 cup) lemon juice
- 350 ml (generous 12 1/4 fl oz/ 1 1/2 cups) milk
- 150 ml (5 1/4 fl oz/ 3/4 cup) single cream
- 170 g (6 oz/ 7/8 cup) sugar
How to make the perfect lemon gelato (ice cream)
Bring the milk almost to the boil, then add the sugar and, off the heat, stir it until it has dissolved. Pour in the cream and lemon juice. Plunge the pan into a bowl of ice, and when the mixture is cold, tranfer it to the ice cream maker. Serve with a sprig of fresh mint.
