- 125 grams of flour
- 100 grams of softened butter, whipped with a spatula
- 2 eggs
- 100 grams of sugar
How to make Langues de chat cookies (cat’s tongues)
Whip the butter for 5 minutes with a spatula.
Mix butter and sugar until the mixture is very foamy, then slowly add the eggs one by one and keep whipping, add flour, keep whipping for 5 minutes more and let it rest in the refrigerator for 30 minutes.
After 30 minutes put the mixture in a sac à poche with a thin spout.
Grease 2 oven plates (or use some baking paper) and, at a distance of 3 cm from each other, make 5 cm length “stripes” of dough.
Put in the oven at 200 ° C and remove the cat tongue cookies when the edges are golden brown.
Take the cookies out of the oven, let them cool and then store them in a sealed box: in this way, they can be kept for a couple of weeks. Serve with custard, for tea, soaked in Vin Santo or covered with almond cream.
