Today’s drink is horchata, a cold drink made from rice, almonds, and cinnamon. It is quite popular in Mexico, and its popularity stems mostly from its freshness, but also from the richness of its flavor.
This beverage is extremely popular because it can satiate even the most voracious appetites without breaking the bank!
Its origins, however, lie in Spain, more specifically in the Valencia region. The earliest horchata recipe was discovered there in the 14th century.
It’s a drink made with tiger nut, a tuber that had to be dried and crushed before being left to macerate in water like the ajoblanco we made a few days before. The beverage was then filtered.
Again, many historians are still arguing the subject today, despite the fact that a very similar drink existed in ancient Egypt. The old horchata would have expanded during the Arab conquests of northern Africa and then Spain, and it still exists today in West Africa and Nigeria under the name kunnu aya.
The Spanish Empire then transported it to its colonies, such as Mexico, where it became a particularly famous drink, such as the one we bring to you today, which will delight fans of rich and sweet drinks with a hint of spices—here cinnamon and vanilla!
