Even better if you can find the 2001 vintage. A colossus of 12 years, of which nine on the yeasts.

This long maturation gives a rocky solemnity to the wine, made of sidereal speckles—seaweeds and musk—which alternate themselves layer by layer in a puff pastry of peach, pineapple, vanilla and citrus cake, creating a towering balance.

The same bubbles, as refined, combined with such an electrifying tastiness make the wine a little bit too roaring, if your are in the mood for silkiness. But this is its mark, the mark of the mountains and the woods of Trento DOC.

Glamorous, technically flawless, solid. The bouquet is rich of tropical aromas, the body is statuary and velvety, the finish is boosted by honey and hazelnuts, the yeasts are smooth and pop up as croissant and coffee. One of the best Spumante of Italy.
