Infinite, is one of the most delicious Chinese dishes, a real masterpiece of contrasting flavors, played on the background crunchiness of the fried pork.

But today we want to go further and make the sweet and sour seitan, that’s right, we say goodbye to our beloved pork, just for once, and try to replace the meat with the most famous gluten concentrate in the world.

The recipe is the same, you just don’t need to marinate seitan… will it live up to its high expectations?

Ingredients to make the sweet and sour seitan recipe

  • 600 grams of seitan
  • sunflower oil for frying
  • 5 tablespoons olive oil
  • 3 cloves of garlic
  • 1 red pepper
  • 1 green pepper
  • 1 slice of pineapple in syrup
  • 3 chopped spring onions

For the batter

  • 80 grams of sifted flour
  • 50 grams of corn starch
  • 1 teaspoon baking soda
  • 20 grams of oil
  • 100 ml of water
  • salt

To make 250 ml of sweet and sour sauce

  • 80 grams of ketchup
  • 2 teaspoons Chinese rice vinegar
  • 2 tablespoons oyster sauce
  • 13 grams of sugar
  • 120 grams of water
  • 2 teaspoons of corn starch
  • 1 teaspoon of sesame oil
  • 30 grams of plum sauce (optional)

How to make the sweet and sour seitan

As always, let’s make the sweet and sour sauce before everything. Prepare all ingredients and pour into a bowl, then stir, cover and refrigerate. We’ll cook the sauce with seitan, don’t worry about it.

Cut seitan into small bites or 1 cm cubes.

Let’s move on to a crucial phase: the batter for frying must be perfect for making seitan crispy outside and tender inside.

You can limit yourself to a light flour sprinkle, if you are in a hurry and skip this step, but for a perfect dish, a little bit of work is needed.

Pour all the ingredients into a large bowl and mix well.

Put 1 glass of sunflower oil in the wok and bring the oil to a temperature of 170 ° C.

Throw the pieces of seitan into the batter, stir to ensure that it adheres well and then dip it in boiling oil.

Fry for a few minutes, then flip and when they are cooked, drain on paper and pat dry.

Ok, now the vegetables: cut the peppers and spring onions into strips, then crush garlic and chop the pineapple.

Pour a tablespoon of oil in the (cleaned) wok, saute the garlic for 2 minutes over high heat, but do not blacken it, then throw in peppers and onions and cook for 8 minutes, making them jump into the wok. Don’t overcook them, they must be crisp to give consistency to our dish.

When vegetables are ready, put pineapple into the wok, then pour in the Chinese sweet and sour sauce and stir.
