Ingredients to make “Zucchini in Scapece”, sweet and sour fried zucchini

  • 6 medium zucchini (courgettes)
  • 1 Tropea (red) onion
  • sultanas
  • 1 tbsp sugar
  • 1 or 2 cloves garlic
  • fresh mint
  • white wine vinegar to taste
  • extra virgin olive oil

How to make the authentic Zucchini in Scapece, sweet and sour fried zucchini

Soak the sultanas in a cup of luke-warm water. Cut the zucchini lengthwise into thin strips. Fry the unpeeled garlic in a little oil then add the zucchini, stirring constantly for five minutes over a high heat. Place the strips on kitchen towel to remove any excess oil. Slice the onion very thinly and fry it briefly with very little oil until slightly transparent.

Add the sugar and vinegar, and cook for one minute more. Arrange the zucchini in a deep serving dish, and add the mint leaves, onions and the drained sultanas.

This dish is eaten cold, and is excellent with smoked fish.
