Rossini cocktail, best sparkling cocktails, cocktail with Champagne & strawberry Rossini is one of the brightest members of the family of the sparkling cocktails: drinks prepared with a juice and sparkling wine or water. It’s the spring version of the Bellini cocktail and is simply prepared with pureed strawberries and Champagne or Spumante Metodo Classico.

Perhaps it’s not as famous as the cocktail dedicated to the painter Gian Battista Bellini, but thanks to the sweetness of the strawberries, which in this period begin to be delicious, Rossini deserves all your attention, especially if you are planning a brunch or an elegant seafood dinner. Or if you want a nice and refreshing cocktail for every hour aperitif.

A little tip when you’re making Rossini: prepare it in advance and in big carafes, you’ll spare a lot of time the cocktails will be more balanced, especially if cooled with a single, large piece of ice.

  • 10 cl of sparkling wine or champagne
  • 5 cl of strawberry puree

How to make the perfect Rossini cocktail

To make a good drink without adding any sugar syrup, strawberries must be fresh, ripe and sweet, ie: perfect. Get 4 or 5 strawberries and crush them in a sieve, muddling with a spoon.

Avoid the blender at all costs, which would kill the delicate flavor of strawberries: the blender is ok for frozen drinks like Margarita or Daiquiri, but not for sparkling cocktails that rely on intact and intense aromas and have only 2 ingredients. There is not even a drop of triple sec here…

The strawberry puree can be frozen in an ice cube tray used for emergencies or to add a touch of flavor to your ice cream.

Cool a glass or flute with ice, then toss away the ice, pour the filtered puree, add champagne or a good Spumante Metodo Classico, stir gently and garnish with a strawberry.

Rossini cocktail food pairings

The choice falls mainly on fish and chicken, nothing too “muscular” or desserts like fruit tarts, panna cotta or soufflé. Recommended dishes: mixed paella, orange chicken, salt-crusted sea bass, fried chicken, grilled, fish balls.
