It’s not a real sandwich, to be more accurate is a focaccia, a delicious focaccia with grilled eggplants, smoked tofu, arugula and creamy dried tomatoes, capers and basil pesto.

The recipe is simple and quick, but it has a lot of flavor. It’s all played on smoky and spicy tones, all wrapped by the aromatic flavor of basil, capers and tomatoes.

Of course smoked tofu is amazing and essential for the success of the dish. Now that we are done here, let’s go the recipe.

Ingredients for the ultimate vegan sandwich with grilled eggplants, smoked tofu, arugula and dried tomatoes & capers sauce

For 4 sandwiches

  • 4 pieces of flat bread, focaccia
  • 1 eggplant
  • 1 pack of smoked tofu, 250 grams
  • 1 tomato
  • arugula leaves
  • 5-6 basil leaves
  • salt and pepper
  • extra virgin olive oil

For the sauce

  • 4 sun-dried tomatoes
  • 10 Fresh cherry tomatoes
  • 1 tablespoon capers, fresh or well washed
  • 1 tablespoon of almonds
  • 50 grams of tofu
  • 5-6 basil leaves
  • salt and pepper
  • extra virgin olive oil
  • 1/2 teaspoon of fresh ground cumin
  • a few leaves of oregano
  • 1 clove of garlic

How to make the perfect vegan sandwich with eggplant, smoked tofu and dried tomatoes and capers sauce

The secret to the success of this sandwich is the sauce, which should be creamy, intense, multi-faceted, but not salty, slightly sweet indeed, to round off the smoky taste of eggplants and tofu.

It is not difficult at all, so do not worry. Cut the eggplant into slices of 1 cm, sprinkle with salt and put them piled in a colander for 1 hour.

Meanwhile, let’s prepare the sauce: put everything in a blender, season with pepper, cumin, oregano, basil and blend by adding 1/4 glass of oil. Almonds are used mostly for consistency, you can not put them if don’t want to.

Refrigerate and let stand for 30 minutes, then take out of the fridge and stir well.
